Ok, I must be an ubergeek because I watched the biochemistry near the end and was riveted.   Here, for all of you who don’t groove on bio, are some tidbits. 

1982- we went low fat which meant high carb or specifically high fructose corn syrup.

Fructose corn syrup looks a lot like ethanol when it hits the liver.  It generates uric acid which is a factor in hypertension.  It also generates inflammation and a portion of it becomes VLDL (very low density lipoprotein).  That means it basically converts directly to fat. 

Also, the M.D. here uses triglycerides/HDL as the ratio for predicting heart disease because he differentiates between two different types of LDL:  light and fluffy and caramelized.  The light stuff doesn’t trash the sides of our arteries, the caramelized (high triglycerides) stuff does. 

Shorthand:  high fructose is evil.  Get your fructose from fruit (which has fiber and blocks the rapid absorption) and nowhere else.
